How to make your own Coffee cake

Time to celebrate? Or just fancy a treat? Then it's time for a delicious cake. This cake is a perfect addition to a cozy afternoon with a cup of coffee or tea. Combine your passion for coffee with your own coffee cake. This recipe from KoffiePiraat is easy to make and guarantees a delicious experience for the true coffee lover.

Ingredients for 1 cake

150 grams of flour

150 grams of soft butter

100 grams of brown caster sugar

1 teaspoon cinnamon

1 sachet of yeast

2 eggs

2 - 3 tablespoons of strong coffee or espresso

Foldable whipped cream

Powdered sugar

Before you start

Before you start, it is useful to first prepare a few things. Weigh all the ingredients and prepare everything. Grease your baking tin and dust it with a little flour. This way you know for sure that the cake does not stick.

Preheat the oven to 150ºC - 170ºC. The right temperature depends on your own oven: a convection oven heats slightly more evenly and can therefore be set slightly lower than an electric oven.

Also make the strong coffee or espresso in advance. This way the coffee can cool down before you start.

Preparation method

Grab a large bowl and mix the eggs, brown sugar and butter in a bowl. Make sure the butter is really soft. This makes mixing the ingredients a lot easier. When the batter becomes creamy. Add the cinnamon and 2/3 of the coffee to this mixture. You will need the rest of the coffee later for the whipped cream. Add the flour and yeast and beat everything well together. Your batter for the coffee cake is now ready.

In the oven

It's time to bake. Pour the batter into the baking tin and divide it evenly. This way you know for sure that the cake is cooked properly. Bake the coffee cake in the oven for about 30-35 minutes. You can check with a skewer whether the cake is cooked. If the skewer is clean, you know for sure that it is cooked.

While you wait, you can already start topping your cake. Combine the whipped cream with the rest of the coffee in a bowl. You can also add extra sugar, but this is of course not mandatory. Beat the whipped cream until stiff and put it in the fridge.

At the table

Is the cake done? Then you can almost enjoy your own coffee cake.

Remove the cake from the oven and let it cool for about 10 minutes. After cooling, remove the cake from the baking tin and place it on a plate or a nice board to serve. Remove the whipped cream from the fridge and decorate the top of the cake with the whipped cream. Sprinkle the coffee cake with as much icing sugar as you like and enjoy your cake. Delicious with a cup of coffee!
